Weight Watchers – Breakfast Recipes

 

Artichoke Heart Scramble

Servings = 1, Estimated POINTS per serving = 3

2 leaf rosemary, finely diced

1 Tbs. shredded greens from green onion

1/8 C. diced tomato

2 tsp. butter

1/4 - 1/2 C. Artichoke hearts, quartered

1/2 tsp. salt

3 egg whites

Salsa

Salt & pepper
 

  1. Saute rosemary leaves, shredded green onion, diced tomato in the butter.
  2. Add artichoke hearts (frozen or packed in brine, NOT marinated!) and heat gently until warm.
  3. Add the egg whites, and stir gently until cooked. Serve with salsa (zero points) & salt and pepper.
